Are there certain high school courses that have to be taken, ie, "American History", "Chemistry", "Physics", certain English courses, math- Algebra, Geometry, etc. (Can you tell I'm on the brink of the high school years . . .:confused2 )

Although you must teach the basic areas of literature, composition, math, science, and social studies, there aren't specific courses that are required. However, the ones you listed are some of the traditional courses taught at the high school level, especially for college-bound students.
If your student is planning on going to college and already knows which college s/he is likely to attend, look at their entrance requirements to see what types of courses they ask for.
